British and China

Traditional British cuisine is substantial, simple and wholesome.The English people have long believed in four meals a day.The popular high tea also come from England. Their life has been influenced by the traditions and tastes from different parts of the British empire: teas from Ceylon and chutney, kedgeree, and mulligatawny soup from India. “And then to breakfast, with what appetite you

have.”(Shakespeare) .The great British breakfast is famous throughout the world! Actually nowadays it is a bit of a myth, today many British people are more likely to have a bowl of cornflakes or a cup of coffee with a cigarette than to indulge in the wonders of this feast!

However that is not to say that the traditional breakfast is dead, far from it, it's just not eaten every day of the week. The typical English breakfast is a 19th century invention, when the majority of English people adopted the copious meal of porridge, fish, bacon and eggs, toast and marmalade, that has now appeared on English breakfast tables for 100 years.

In fact,The UK’s restaurants can provide many types for meals,like Fuirt Juice, Coffee ,Jam ,Pies, Puddings, Buns and Cakes.

Pies and puddings are related phenomena in British culinary

history. Originally, both solved the problem of preparing dinners made with less expensive meats. Pies covered a stew or other ingredients with a crust; puddings were made from butcher's scraps tucked into a sheep's stomach, then steamed or boiled. Pies have remained pies, although, in addition to savory pies, there now exist sweet variations, which tend to have two crusts or a bottom crust only.

Pie crusts can be made from a short dough or puff pastry. Snacks and bar food are often in pie form: pasties are filled turnovers.

Over time, however, in a confusing development, pudding has become a more general term for a sweet or savory steamed mixture -- as well as a word that describes desserts in general. For example, black pudding is actually made with pig's blood. Whereas plum pudding is a Christmas treat consisting of a steamed cake of beef suet and dried and candied fruits soaked in brandy. And, of course, one can't forget rice pudding.

Amongst cakes, buns and pastries local delicacies include Bath Buns, Chelsea Buns, Eccles Cakes, and Banbury Cakes.

And the supper is also very improtant to UK’s people in their life.In usual the time for supper is late. While they eatting and drinking,they also chatting to promote their emotion.They often take many hours to having dinner.So we can find British is a mationality that taking sovereignty seirously.

Famous for its abundance and exquisite, Chinese food culture has occupied an important part in the nation's tradition cultures. China have 5000 years history. Due to the diversity of the climate, products and customs, there are widely different food styles and taste in local regions. Through creation by past dynasties, the long standing cooking art has formed rich and colorful local dishes. There are four main types of food distinguishing by region,contisting of which consists of Shangdong, Zhejiang, Sichuan, Jiangsu, Guangdong, Hunan, Fujian and Anhui.

Shandong dishes are divided into two factions as Jinan and Jiaodong dishes. They are good at clear dishes, pure but not greasy.

Zhejiang dishes consist of Hangzhou, Ningbo and Shaoxing branches.It’s characteristic the source of raw materials come widely,the work of using knifes is very good and the level of fire is suitbale.

Sichuan dishes have enjoyed the fame that every dish has its own characteristic and none two share the same taste. They are also famous for pocked, peppery and savor taste. Chengdu and Chongqing dishes are two mail branches.

Jiangsu dishes lay stress on the original taste with proper sweetness and salty. They consist of Yangzhou, Suzhou and Nanjing branches. Chekiang dishes are both delicious and sweet smelling, both soft and slide, clean and not greasy.

Guangdong dishes have Guangzhou, Chaozhou and Dongjiang three styles of dishes. They are good at choice seafood and pay more attention to the cooking skills. They act carefully at light food with tender and slide taste, from which they earn the praise of “It has a best taste in only in Guangzhou.”

Hunan dishes consist of Xiangjian, Dongting Lake and Xiangxi coteau three local dishes. Their tastes lay stress on thick, arid and peppery food, mostly using seasoning like hot peppery, shallot and capsicum.

Minghou, Fuzhou,Ximen and Quanzhou dishes are the representatives of Fujian dishes. They use the seafood as the main material with elaborately cooks beautiful color and delicious taste of oil. They are good at frying, gliding, decocting and pay attention to the dishes sweetness, salty, and the appearance. The most distinct features are their “pickled taste”.

Anhwui dishes pay more attention to the taste, color of dishes and the temperature to cook them. They are expert in cooking delicacies from mountains and sea.

As usual in life,Chinese people always eat cooked rice and cooked wheaten as main food.And some vegetable and meat also as usual.But when come to traditional fesitival,we take the food seriously.For example Spring Festival,we always eat “Jiao Zi” in the Eve on Spring Festival .Because “JiaoZi” is like the money we use in antiquit. And custom ask us all the

familties must eat “Jiao Zi” together.That means we would not be separated forever. We also eat New Year’s cakes expect “Jiao Zi”.Because New Year’s Cake is called “Nian Gao” in Chinese.That means we can better and better in the later.Fishes are also the important dish in Sprinng Festival.

But the food in Christmas is different from China in Spring Festival.

Christmas-Pudding is come from the traditional food :the milk oats grueland and the dried furit.The traditional custom ask all the families take part in making the Christmas-Pudding together one month ago before Christmas.That means all the families unite as one .When they stir the dough,they will make a vow to a god.In the finally ,they will put a coin into the dough.If anyone happen to this coin when he eatting ,his everything will goes well in the next year.

Christmas Cake is a dim sum after the dinner.The dried furit and the almond are used for it .And there is a story of white sugar.They use the jam to write “Marry Christmas” on the cake .After they eat the Christmas Cake,the Christmas in end .

The baked goose is also very important to the British people to celebrate Christmas.

Resulting in the difference of the food culture between British and China,the reasones as following:the first one is the idea of cuisine is different.Comparing to Chinese cuisine

mind “ taste”,UK’s people consider the cuisine is a sense. They think whether the colour and the taste of the food are delicious,the nutrition is the mostest important. Though sometimes the taste is not very well,they still eat all the food because these food have much nutrition.This idea of cuisine is suit for the characteristic of the foreign philosophy.

The second reason is UK’s people think the food is used for eatting when hungry.So they usually choose the meat or the beaf.But Chinese people take “taste” seriously.So sometimes Chinese people use the raw materials that UK’s people have never used .From this we can find the raw mateials come widely.

The final reason is the manner of the cuisine is different between UK and China.This reason also infulenced on the disposition of the nation. In China,no matter the purpose of a feast is what,the feast is a form.That is all the people eat together around a circle table.The delicious food is the medium to promote our emotion.But in UK,though the delicious food is important,the food is a foil.The people consider the friendship is the nucleus.They want to promote the friendship by talking.This is reflect on the buffet.If we compare the feast to promote the emotionto the dance.That says Chinese feast is a collective dancing and the UK’s feast is social dancing.
